While shopping in Aldis I spied the big mushrooms I needed. Right then the evening ideas started to form. We already had everything but the mushrooms and this package held two large meaty pieces ready to put on the BBQ.With just a splash of Kikkoman marinade, and 1 Tbls.of olive oil, place on a hot fire and grill 3-4 minutes. Add your choice of cheese,(ours was Brie, very yummy),a few rings of red onion, and a toasted Ciabata square bun, (Walmart): you are in for the best burger of all time. This tastes better than a meat filling. If you have a light beer in the fridge or a clean, cold Rosé this would be a treat for company.The only thing missing here is the picture. Alas, I was so hungry I forgot to record it all. Next time! Look down to the bottom.
I do have pictures of a fabulous flat bread pizza with thin sliced apples and red onion. This was so easy and quick.The recipe will follow the pictures.
Pizza Dough Recipe, 4 bases
1 cup warm water
1 Tbls. sugar
1 pkg, (1/4 oz.) dry yeast, proof about 5 minutes
Mix
2 1/4 cups all purpose flour
1 c up cake flour
1 Tbls. Kosher salt
2 Tbls. olive oil for work bowl
Method
Dissolve yeast/water/sugar mixture in small bowl to proof.
Mix flours/salt in mixer. Add yeast mixture on low, knead for 10 minutes.
Place dough in oiled bowl, coat surface of dough, cover with plastic wrap and let rise in warmish place, (oven light on), about 2 hours.
Punch down, divide into 4 balls. Let rise 30 minutes. Use one, freeze the rest for future .
Toppings
2 Tbls. butter
1 large red onion, thinly sliced
2 oz. sliced cooked ham
1 small red apple, cored, quartered, thinly sliced
2/3 cup shredded Swiss cheese
Fresh snipped thyme
Method
Place oven rack in lowest setting .
Preheat oven to 450.
Lightly coat an baking sheet with non stick spray.
In a large skillet, melt butter over medium and add sliced onions.
Cook covered about 12 minutes or until tender, stirring occasionally. Uncover and cook about 5 more minutes to caramelize. Set aside.
On a lightly floured surface, press out dough with fingers to 13x9 size.
Transfer to bake pan.
Shape edges and prick all with a fork.
Bake about 8 minutes until lightly puffed and brown. Remove from oven.
Top with ham, then layer on onions, apple slices and cheese. Bake 10 minutes or until crust is crispy and cheese is melted and apple slices are tender. Sprinkle with minced thyme. Pour drinks and enjoy! 6 servings.
